I have Ed-E with me as a Fallout New Vegas Companion.
And while I'm pretty sure her attack mode is on passive, only attack when I'm attacking, He/she/it attacks anything in sight, regardless.
Have you fine people noticed this as well, or am I just unlucky with a warmongering robot?

Dunno, I never sneak and have a grand total of 20 sneak points on my file with ED-E. But I'd assume it's a glitch, being New Vegas and all.

Can't say I noticed but I just use my companions for luggage, after awhile so I barely notice they there. You could try to put her on Wait mode while you go sneaking around though.

Apparently this issue has been, supposedly, addressed in the latest patch. ED-E and Rex randomly attack people. It happened to me in a Casino once. I was walking about and "Zap!" ED-E shot a random guy in the face.

It will only play the music when you are in danger, not when sneaking or in cautious. It's good to alert you but it makes no differnece with enemies as far as I know. ED-E when on passive shouldn't shoot enemies without you doing so first. Although ED-E will automaticly attack if someone is going to attack you, even when you do nothing. I hope this helps.
EDIT: Unless it's a bug I don't have, then your buggered. XD

Use Boone, you'll notice he's there when you roam the mojave for an hr finding only corpses, then turn around and realize he's been killing thing not even loaded on your screen yet. I had to take his silencer because of it, and now I just hear gun shots and turn around to see him staring at me then wink.

I'm pretty sure ED-E plays that music when it is detected (not entirely sure). As such it will fight back and the music lets you know combat is imminent.

Even with all of his/her flaws, I can't stand being without ED-E. He/she has died dozens of times in my care, but I always reload a previous save, no matter the consequence. Also, I find the attack music to be extremely adorable.

You say that like it's a bad thing. Boone makes speech and science characters (with a side order of Lockpick, Survival, and Medicine) plausible and really makes you appreciate the point of designing such a powerful companion. Try a weak but charismatic Courier out sometime. Completely changes the way you approach the game---and for my money it's more fun. Just keep your Endurance at no less than 6 for the plethora of defensive perks and more implants from Dr. Usanagi. That's pretty much mandatory for all my character builds.

Sometimes it is, esp in situations like the OP stated but instead of music playing you hear a gunshot. There's been plenty of times i've been sneaking around sniping and while I line up a shot he takes it before me, and leaves me crouching there grumbling to myself.

You got the XP. You want the Animal Control and Bug Stomper perks, leave Boone in the 38 and go shoot mantises and geckos outside Goodsprings. (and you want Lord Death of Murder Mountain or Set Lasers For Fun, that's why the gaming gods created Powder Gangers.) But when those f*cking Cazadores (and the F-bomb is a mandatory part of their name because of that sound that makes me jump clean out of my skin whenever they're around---f*cking Cazadores!) show up, too squirrely for free-aim and too dangerous to let get close enough for reliable VATS, I'm glad Boone's under no such constraint.

If you really need to sneak have Lily as your companion and have her wait somewhere to increase your sneaking time by an insane amount.

He never seems to do that for me. Even though he is set to use guns he always just runs up and melees. It gets really annoying trying not to hit him when trying to shoot the enemy. Is this just a glitch?
OT: Yea I like the music because it alerts me to enemies but I do find it weird when Im sneaking and it just blasts music.

the only thing i had 3 seconds later was a DEAD BOONE! =Cgive it antidote in it's inventory.
